Hosted at Fermenthings, the event brought together spice lovers, fermentation nerds, and curious taste chasers to experiment, taste, and create across five fire-powered workshops.<\/p>\n<h3 data-start=\"940\" data-end=\"961\">Introduction<\/h3>\n<p data-start=\"962\" data-end=\"1221\">Harissa isn\u2019t just a condiment\u2014it\u2019s cultural memory in a jar. Born in the kitchens and spice markets of North Africa, particularly Tunisia, it carries the sunbaked heat of chilies, the perfume of freshly ground spices, and the richness of preserved tradition.<\/p>\n<p data-start=\"1223\" data-end=\"1607\">While commercial harissas tend to be streamlined and standardized, this workshop offered participants the chance to build their own version\u2014customized, layered, and deeply personal. We explored a blend rooted in traditional methods but adapted with smoky chipotle, sweet Spanish peppers, and the golden brightness of aj\u00ed amarillo, resulting in a paste that\u2019s as bold as it is nuanced.<\/p>\n<hr data-start=\"1658\" data-end=\"1661\" \/>\n<h3 data-start=\"1663\" data-end=\"1712\">Ingredients <em data-start=\"1682\" data-end=\"1710\">(for approx. 50g of paste)<\/em><\/h3>\n<p data-start=\"1713\" data-end=\"1823\">This amount yields a small jar\u2014perfect for seasoning multiple dishes or stirring into dressings and marinades.<\/p>\n<ul data-start=\"1825\" data-end=\"2308\">\n<li data-start=\"1825\" data-end=\"1889\">\n<p data-start=\"1827\" data-end=\"1889\"><strong data-start=\"1827\" data-end=\"1855\">2 dried chipotle peppers<\/strong> \u2013 for smokiness and umami depth<\/p>\n<\/li>\n<li data-start=\"1890\" data-end=\"1987\">\n<p data-start=\"1892\" data-end=\"1987\"><strong data-start=\"1892\" data-end=\"1923\">2 dried Spanish red peppers<\/strong> (\u00f1ora or pimiento choricero) \u2013 for sweetness and fruity aroma<\/p>\n<\/li>\n<li data-start=\"1988\" data-end=\"2077\">\n<p data-start=\"1990\" data-end=\"2077\"><strong data-start=\"1990\" data-end=\"2014\">1 dried aj\u00ed amarillo<\/strong> \u2013 bright yellow-orange, adds tropical fruit and citrusy lift<\/p>\n<\/li>\n<li data-start=\"2078\" data-end=\"2118\">\n<p data-start=\"2080\" data-end=\"2118\"><strong data-start=\"2080\" data-end=\"2099\">2 cloves garlic<\/strong> \u2013 punchy and raw<\/p>\n<\/li>\n<li data-start=\"2119\" data-end=\"2144\">\n<p data-start=\"2121\" data-end=\"2144\"><strong data-start=\"2121\" data-end=\"2142\">1 tsp cumin seeds<\/strong><\/p>\n<\/li>\n<li data-start=\"2145\" data-end=\"2174\">\n<p data-start=\"2147\" data-end=\"2174\"><strong data-start=\"2147\" data-end=\"2172\">1 tsp coriander seeds<\/strong><\/p>\n<\/li>\n<li data-start=\"2175\" data-end=\"2202\">\n<p data-start=\"2177\" data-end=\"2202\"><strong data-start=\"2177\" data-end=\"2200\">1 tsp caraway seeds<\/strong><\/p>\n<\/li>\n<li data-start=\"2203\" data-end=\"2268\">\n<p data-start=\"2205\" data-end=\"2268\"><strong data-start=\"2205\" data-end=\"2218\">Olive oil<\/strong> \u2013 enough to bind and blend; the quality matters<\/p>\n<\/li>\n<li data-start=\"2269\" data-end=\"2308\">\n<p data-start=\"2271\" data-end=\"2308\"><strong data-start=\"2271\" data-end=\"2279\">Salt<\/strong> \u2013 start small, taste often<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2310\" data-end=\"2333\"><em data-start=\"2310\" data-end=\"2331\">Optional additions:<\/em><\/p>\n<ul data-start=\"2334\" data-end=\"2499\">\n<li data-start=\"2334\" data-end=\"2392\">\n<p data-start=\"2336\" data-end=\"2392\">A dash of <strong data-start=\"2346\" data-end=\"2360\">lemon zest<\/strong> or <strong data-start=\"2364\" data-end=\"2375\">vinegar<\/strong> for brightness<\/p>\n<\/li>\n<li data-start=\"2393\" data-end=\"2446\">\n<p data-start=\"2395\" data-end=\"2446\">A pinch of <strong data-start=\"2406\" data-end=\"2424\">smoked paprika<\/strong> for color and aroma<\/p>\n<\/li>\n<li data-start=\"2447\" data-end=\"2499\">\n<p data-start=\"2449\" data-end=\"2499\">Fresh or dried herbs (mint, thyme) for extra depth<\/p>\n<\/li>\n<\/ul>\n<hr data-start=\"2501\" data-end=\"2504\" \/>\n<h3 data-start=\"2506\" data-end=\"2521\">\u00a0Method<\/h3>\n<ol class=\"ol1\">\n<li class=\"li1\">Remove the stems and most seeds from the peppers and chilies.<\/li>\n<li class=\"li1\">Soak the dried chilies and red peppers in hot water for at least 30 minutes (or overnight for best results).<\/li>\n<li class=\"li1\">Drain and let them sit in a strainer for 30 minutes to remove excess water.<\/li>\n<li class=\"li1\">If using fresh paprika, roast until soft, then drain.<\/li>\n<li class=\"li1\">Peel the garlic and set aside.<\/li>\n<li class=\"li1\">Grind the peppers and chilies into a paste using a mortar and pestle, food processor, or meat grinder.<\/li>\n<li class=\"li1\">Add the garlic and 1 tablespoon olive oil, and grind again until the paste is well combined, smooth but still slightly chunky.<\/li>\n<li class=\"li1\">Dry roast the caraway, coriander, and cumin seeds in a pan over medium heat for 5 minutes until fragrant.<\/li>\n<li class=\"li1\">Grind the toasted spices into a fine powder.<\/li>\n<li class=\"li1\">Add the spices and salt to the chili paste and mix thoroughly.<\/li>\n<li class=\"li1\">Optionally, add lemon juice for acidity and brightness.<\/li>\n<li class=\"li1\">Transfer the harissa into a jar and top with the remaining tablespoon of olive oil to preserve freshness.<\/li>\n<li class=\"li1\">Store in the refrigerator.
