The bright yellow of the freshly grated turmeric gives the ferment a very distinct flavour and color. Mix the salt in the water until fully dissolved<br \/>\n2. Mix the finely sliced fennel with the turmeric, the ground spices. Transfer to a glass jar.<br \/>\n3. Add the salty water until the vegetables are submerged (not all the water is needed), put a weight on top and ferment for 2-3 weeks at room temperature.<br \/>\n4. Check daily and press the vegetables down if needed.<br \/>\n5.
